His culinary journey began at iconic venues like flying fish, pilu, Assiette, longrain and ormeggio before evolving into something more personal - bringing the finesse of restaurant dining into people’s homes and special events.
Firebyrd was born out of this idea - that food should feel elevated but effortless. Every dish is built from scratch, every event is tailored - whether it’s an intimate dinner for eight, a wedding, or a 100-person corporate function.
Jordan’s style is globally influenced, with a deep appreciation for Japanese and Southeast Asian techniques, seasonal Australian produce, and striking presentation. He’s spent time honing his craft both here and overseas - from the skyscrapers of Tokyo to the beaches of Sydney.
